HOW TO MAKE QUETTA'S FAMOUS NAMKEEN (SALTY) ROSH

Salty roast or Namkeen Rosh is a well-known recipe of Quetta and surroundings and it is called ROSH. People are mistaken about Rosh they think that they are eating Rosh but they don't know that it's that Rosh made mostly in Quetta. We have brought this recipe for you so you know, what is Rosh and how is it made. Meat fat (White meat) important ingredient without it, dish can't be made we are going to cook Rosh for them, and for that, the meat we purchased to make sure to cut it in big pieces, each piece is almost 150 to 180 grams or more. Then wash it with clean water and do not strain the last water from it this is meat fat we use it later in the same dish. 


First, sprinkle salt on the meat almost 2 teaspoon salt or according to taste and if required we can adjust the salt later on we should not add a lot of salt there might not be any need for more salt later on if there was it can be added at the moment we are adding two teaspoon salt and then we mix it with the meat well by doing this the meat will already have the salt before we start to cook it meat releases water when the salt is applied on it, this water will be enough to cook the meat we cook it in its own fat, do not add any oil in it nor extra water. 


It is is a great dish for meat lovers and especially people of Quetta and Peshawar like dishes which are cooked in meat fat, rest don't like it as much but it is hygienic. Since this is pure now place two to three tomatoes, we have washed these thoroughly place these without cutting them one onion peeled not cut this is only to have it's fragrance add few pieces of cinnamon and sprinkle 30 to 40 black peppers 3 pieces of ginger add these as well. 


After we have added these and cover it and turn the fire on below it (low flame) we put some weight on it so it will cook in its own steam Now leave it for 90 to 100 minutes and then check it in this dish meat has to be cooked very well so, wait for some time, almost one hour has passed, now check the condition of the meat if it is soft it's going great and now cover it again and leave it for another half an hour or slightly more. It has been almost one and a half hour now check the meat if it is cooked properly. Now be sure it must be cooked enough now, You can also add some green chillies in it to make it a little bit spicy. Then take a pot and put the Rosh in it and serve it to your loved ones.
